Roll out the pastry and cut out the amount of bases required. Grease the cake tray and put in the pastry cases. Bake them in a 200 degree oven for 10 minutes or until they start to brown, leave to cool. Peel and core the apples and cut them into slices.
Cover the bottom of a saucepan with water and add the apple. Cook until soft and sauce like, adding more water if it starts to catch. Leave to cool.
One the apple and pastry is cool spread a small layer of apple in the bottom of the pastry case. Then make the custard using he instructions on the packet but replacing the milk with soya milk. If you are using sweetened soya milk you will find you will need less sugar. I tend to make the mixture extra thick as I find this is nicer in the tarts. Once the custard is ready spoon some on the top of the tarts. Eat warm or cold. Great served with soya cream.
They can also be made with jam instead of apple or just with custard. You can even add some cocoa powder to the custard and make them chocolate custard tarts.
