Line a baking dish with the pastry and bake blind until crispy.
To make the filling cut up the banana and soak the sultanas in boiling water until soft. Put them in a bowl with the cinnamon and cook in the microwave for 2 minutes, stir and then put in again for 2 minutes.
Use a hand blender to mush up the bananas and sultanas then put into the pastry base. You can decorate the top with a little more pastry if you wish.
Put in the oven on gas mark 6 for 15 minutes. This is best served chilled with some whipped soya cream. |
