Peel and finely chop the garlic, ginger and spring onion (the ginger should be the same amount as the garlic). Dry fry these ingredients in a wok. Then add 2 tablespoons of soy sauce and allow it to start to go sticky. If it begins to actually stick to the pan add a tablespoon of oil to unstick it. Add the beansprouts and turn in the mixture making sure it is well coated. Add 2 more table spoons of soy sauce and make sure the bottom of the pan is clean as all the flavour will be there. Cook for 2 minutes and serve immediately.
