Ingredients
275g self raising flour
175g unrefined sugar
1tsp baking powder
100ml of vegetable oil
225ml soya milk
half a teaspoon vanilla essence
fresh or dried blueberries

Put the flour, sugar and baking powder into a large bowl.
Whisk in the vegetable oil, milk and vanilla essence in a jug and stir it into the mixture.
Add the blueberries to the mixture and quickly stir it in. Don't stir for more than 30 seconds, it is ok if the mixture is lumpy.
Put the mixture into muffin cases, double the cases so that the mixture rises and doesn`t spread out.
Put in a preheated oven at 200C/400F and bake for about 20-30 mins until the muffins have risen.
