RECIPES - SOUPS - Broccoli Soup with Sun Dried Tomato Croutons
Ingredients
1 small head broccoli
1 onion
2 medium potatoes
3 tablespoons vegan bouillon powder
freshly ground pepper
Chop the vegetables into small chunks. Cover with boiling water and add the bullion powder. Bring to the boil and simmer for 15 minutes. Simply pour into a blender and blend into smooth, then taste and season if necessary. For the croutons - slice some bread and spread both sides with sun-dried tomato paste. Place on a griddle pan on medium heat (or under a grill) until toasted.
