Remove the leaves and base from the cauliflower and disgard. Chop up the florettes and boil for 20 minutes until soft. Then put it into a blender with the soya milk and blend until smooth. Next add the cheese. The amount that you need will depend on the strength of the cheese. If the cheese isn't very strong add a teaspoon of mustard to intensify the flavour. Season and blend again. At this point taste the mixture to see if it needs more seasoning, mustard or cheese.
Return to the pan and warm through. A great way to get children to eat cauliflower - can even be used instead of a cheese sauce on pasta.
