1 diced onion
2 sliced carrots
4 cubed potatoes
1 chopped red pepper
1 tin of drained chick peas
50g coconut block
2 cloves crushed garlic
1 tsp curry powder
salt
2 tsp mayonnaise
vegetable oil
500ml hot water
Heat the oil in a pan. Once hot add the onions and curry powder and then the carrots. Cook until the onions are transparent. Add chick peas and the red pepper
and cook for a few minutes. Add potatoes, garlic, coconut block and salt and then the hot water. Bring to the boil, stir in the mayonnaise and simmer until the potatoes are cooked. Serve with rice.
