Finely cut the garlic and ginger. Shred the other vegetables into think sticks or slices. Heat the oil in a wok and put in al the ingredients apart from the pak choi and soy sauce. Cook for 5 minutes. Place the pak choi on the top and allow it to steam for a few minutes. Mix thoroughly and serve sprinkled with soy sauce. It is lovely if you add water chestnuts and smoked / marinated tofu.
