recipes for vegans -  curry

Ingredients

vegetable oil
1 tin butter beans
1 medium onion
1 clove garlic
1 orange pepper
6 medium mushrooms
1 medium potato
1 tbs medium curry powder
1 tsp boullion powder

 


Cover the bottom of a saucepan with vegetable oil and heat. Once it is bubbling add the curry powder and the onion. Once the onion has started to cook add the pepper and mushroom (chopped) and fry until soft, then add the potato and garlic. Fry for 5 minutes then cover the ingredients with hot water, add the boullion powder and simmer for 20 mins.

Serve with rice or naan bread.
