Peel the potatoes and chop into small chunks. Put in a saucepan and cover with boiling water. Bring to the boil and keep boiling gently for 12 minutes.
Strain the water off the potatoes and mash. Add the milk and margarine and mash well again.
Heat the olive oil in a frying pan and add the potatoes. Continue to fry the potatoes until they are golden brown. Serve with salt.
