RECIPES - MAIN COURSES - Green Lentil Dahl

Ingredients

I tin of green lentils
curry powder
potatoes
mushrooms
1 red onion
1 clove garlic
vegetable oil
salt


Heat the vegetable oil in a saucepan and saute the onion. Add the curry powder and stir. Add the mushrooms and cook until just starting to brown. Add the tin of lentils (drained) and stir in, making sure they are fully coated with the oil. Add the crushed garlic. Add some boiling water and the chunks of potato and bring to the boil. Simmer until the potatoes are soft. Serve with rice and mango chutney.
