Ingredients

4 lemons
100ml fructose syrup
3 tsp arrowroot



Juice the lemons and tip into a saucepan. Add the arrowroot and whisk. Bring to the boil and remove from the heat. Add the syrup and taste. How much syrup you need will depend on how sweet the lemons are.

Serve warm as a dip for fresh fruit or cold on a pastry or biscuit base topped with vegan whipping cream.
