Chop up the onion, mushrooms, red pepper, courgette and garlic and fry in the oil until soft. Add the lentils (drained) and the bread grated into crumbs. Stir well. Add the crushed cashew nuts, mixed herbs and some salt if you desire and stir again.
Put in a greased baking dish and put in the microwave for 20 minutes, then bake in the oven on gas markk 7 for 20 minutes.
