Cook the lentils until just soft for about 15-20 mins. Soak the couscous until it is soft.
Finely chop the vegetables and grate the carrot.
Heat the oil in a pan and add the herbs, onion and garlic. Cook for 5 minutes and add the mushrooms and peppers. Cook for a further 5 minutes and then add the carrot. When that has cooked for a couple of minutes mix in the couscous and lentils.
Place in a greased microwavable dish and cook at full power (800w) for 15 minutes. Turn out of the dish and it is ready to cut up to serve.
