To make the pancake mix I simply use wholemeal flour with soya milk. Mix quantities together until the pancakes are slightly thick. Melt soya margarine in the pan and pour enough mix to fill 3/4 of the pan. Once it starts to cook move the pan around to spread out the pancake mix that is still on the top to around the edges, this way you make nice thin pancakes. Once it is starting to brown on the bottom flip over and cook the other side.

baco bits and soya mayonnaise
margarine and nutritional yeast flakes roasted vegetables
sliced pepper
salt and pepper
sun dried tomato paste and fried mushrooms
sliced tomato and spring onions
jam
lemon juice (I find you don't need sugar as the soya milk makes the pancake sweet)
fresh fruit with soya cream or ice cream
maple syrup
