Wash and remove any bad bits from the potatoes. stab a few times with a knife and microwave for 5 minutes on full power. Turn over and microwave for a further 5 minutes. Put in a 200 degree pre heated oven for 1 hour turning over half way through cooking.
Remove from the oven and place onto a chopping board. I find it easiest to use a clean teatowel for holding the potatoes. Slice in half and spoon out the potato into a bowl. I try to keep the skins intact so that I can stuff them for another dish. Mash the potato with a masher adding a knob of margarine and a tablespoon of milk per person. Mash until the potato is creamy and soft or even use a food mixer. Season to taste.
