RECIPES - LUNCHES - Red Pepper and Tomato Couscous

Ingredients

1 red pepper
4 vine ripened tomatoes
1 vegetable stock cube
200g couscous
1 teaspoon sun dried tomato paste
1 red onion
1 brown skinned onion
vegetable oil

 


Bring 400ml of water to the boil with the stock cube in and then add the couscous and turn off the heat. Leave the couscous for 10 minutes to soften and then stir. Meanwhile finely chop the onions, pepper and tomatoes and fry in a tablespoon of oil until browned. Once the couscous is ready add it to the vegetable mix with the tomato paste. Mix thoroughly.
