Chop the onion, courgette and carrot into thin strips and fry gently in the oil with the garlic until they start to brown. Add soya sauce.
Cook the rice noodles according to the instructions then add to the vegetable mix.
Lay out the filo pastry and separate into separate strips. Cut to size and then fill with the mix. Then tuck in the top and bottom and roll up.
Once you have made enough rolls put them on a greased baking tray in the oven until they start to brown. If you want them to be crispier you can cook them in a deep fat fryer instead, or fry the cooked spring rolls in some vegetable oil.
Serve with sweet chilli dipping sauce. |
