Use any vegetables suitable for roasting (such as onions, peppers, courgette, mushrooms, carrots etc)
1 tbsp olive oil per person
1 tbsp balsamic vinegar per person
1 tbsp fructose syrup per person
Cut up the vegetables into similar sized chunks and put in a baking dish. mix together the other ingredients and pour over the veg tossing them in the juice until they are all coated. Bake in a 200 degree preheated oven for one hour stirring a few times during cooking.
