Recipes for Vegans - Tomato Soup with Garlic Croutons

Ingredients

225g tin of tomatoes
1 onion
1 clove garlic
1 tbsp sun dried tomato paste
2 tbsp tomato ketchup
1 tsp vegan worcester sauce
vegetable oil
garlic infused olive oil
bread


 

To make the soup fry the onion and garlic in a little vegetable oil for 5 minutes. Blend with the tomatoes and return to the saucepan. Add in the tomato past, ketchup and worcester sauce and taste. Add salt and pepper if necessary.
 
To make the croutons fry bread in garlic infused olive oil (or crush some garlic and put that in olive oil with the bread) and then cut into heart shapes or use a heart shaped cutter.
